I work until 7 pm every other Saturday, and my slow cooker comes in very handy on those nights. This time, I went with something I ate all the time growing up, but haven't had in years. Beans and rice. I kept it simple. Borlotti beans (Italian mottled beans very similar to pinto beans), onion, a little garlic, some chili powder, black pepper, and a ham hock. That's it.
I soaked the beans overnight, then dumped them in the slow cooker that morning before I left for work. Eight hours later I ladled them into a bowl with a bit of white rice, and it was beautiful. The beans had disintegrated a bit, but they tasted fine. And the pork melted in your mouth. I was tempted to spice it up with some Tabasco sauce or something (and I did when I ate leftovers for lunch the next day), but that night I just wanted to enjoy the simple flavors of the beans and the pig.
I might throw in some celery and capsicum (bell pepper) next time. Maybe a bit of sausage, too. Or maybe I'll just keep it simple.
