Then because I decided to give this one an Italian-inspired flavor, I've added garlic, kalamata olives, semi-sundried tomatoes, two cans of crushed tomatoes, basil, oregano, and a little bit of balsamic vinegar. It's been simmering away for nearly an hour, and it's smelling pretty damned good. 
And now that it's three hours later, I can say that it tasted pretty damned good, too! I can't believe these soups come out tasting so good, and yet as recently as a couple of weeks ago, I would've just thrown all those old veggies away.
