Another Slow-Carb Lunch: Chicken, Lentils, Veggies, and Salad

Damn, how hard is my life? Chicken breast, 1/3 of a can of lentils mixed with cauliflower, broccoli, carrot and snow peas with some salsa, plus a salad with baby spinach, onion, and cherry tomatoes, with a vinaigrette dressing (olive oil, red wine vinegar, salt and pepper).

It came in at 665 calories (12 ProPoints), mainly because Jordo's chicken breasts are pretty big, and also because I was pretty liberal with the olive oil. I may start cutting them up and freezing them in smaller portions so that I get 3 servings out of each breast. But again, for now, these larger servings are very satisfying, and even if I weren't exercising at all, I could stay within my daily calorie/ProPoint allowance eating this way.

And again, whether I stick with the slow-carb thing or not, I would happily eat this meal again. I'd probably use 2/3 the amount of chicken, add in a little cheese to the salad, and maybe some guacamole for the chicken.

One thing I've noticed is that before and during the prep, I start thinking about those things that I'm not including, and that the meal isn't going to be very nice. But once I start eating, it's fine. After three days of slow-carbing, I'm going to have my first Eat-Whatever-I-Want Day tomorrow. After weigh-in, naturally. So far, I've got a cheeseburger and french fries lined up, a big homemade sub and potato chips for dinner, and some ice cream waiting for me. That and a few frosty mugs of ale ought to hold me for a week.

Since lunch I've had another quick 10 minute session on the cross-trainer. Well, 10:17 actually, to finish a full 3k. That's another 172 cals (4 ProPoints) burned, putting my net cals at 584 so far today. Dinner and a coffee ought to keep me under 2000 for the day, which would put my net at about 1250, or less if I get in another workout.
