I've been working on the meal plan since I woke up this morning, and I think I've got it worked out. The only request from the boys was for...meat loaf. I'm really not sure how I feel about that. :) And because I'm all about the Getting Shit Done, I'm also almost finished making the spaghetti for dinner tonight, and I've started on the grocery order.
Friday: Hamburgers & Chips
Saturday: Mexican Crock Pot Casserole
Sunday: Beef Stroganoff, Garlic Green Beans
Monday: Meat Loaf , Creamy Herb & Garlic Potato Bake
Tuesday: Lamb, Chorizo, and Bean Stir Fry
Wednesday: Spaghetti
Thursday: Chicken & Rice Casserole w/Summer Veggies
I was thinking about doing homemade pizzas on Friday night, but James is over at a friend's house but home in time for dinner (but probably not in time to help make dinner), and Jack is having a friend over to spend the night. So in the end, I decided there were too many damned kids coming and going, and went for an easier option.
The Mexican Crock Pot thing is because I have been wanting something Mexican, but I work that day, so this is something that I can have cooking while I'm at work.
I've had the beef stroganoff recipe for a while, but haven't tried it. I don't think I've ever made stroganoff that wasn't some kind of hamburger helper thing. I'm pretty sure I can do better than that.
Lamb and chorizo stir fry because I've got chorizo that I didn't use last night, and because I want to see if I can sneak the lamb past Jack.
Spaghetti because, duh, it's Wednesday. And Chicken & Rice casserole because I was trying to think of something easy that Karen could just stick in the oven, then remembered that I won't be at work that night because I finish work TOMORROW NIGHT. Don't get me wrong, I love my job. But I'm ready for summer vacation. I've got a lot of shit I want to get done, and I'm ready to get started!
