Dinner last night was Simple Sausage Supper, from The Stonesoup. I blew the minimalist aspect of the dish straight away, by adding in a few extra ingredients. For the veggies, I went with parsnips, swede (turnip) and garlic, plus a bit of whatever root veggies were hanging around the kitchen, which ended up being potato, sweet potato, and carrot. The sausages were from Coles--Angus beef with garlic and mustard..
Both the prep and the cooking were dead easy.
1. Peel and cut up all the root veggies, separate the garlic into cloves, then dump them in a big ziploc bag with some olive oil, salt and pepper, and a bit of rosemary and thyme.
2. Give 'em a good shake, then dump them into a baking dish. Toss in the sausages and cook at 200C (400F) for 30-45 minutes.
3. Stir everything around, add a cup of chicken stock, bake for another 45-60 minutes.
And that's it! The veggies were tasty, but I should've been a little more minimalist and either skipped the rosemary and thyme altogether, or went a little easier on it to more fully enjoy the flavors of the veggies themselves. I think this was the first time I've cooked or eaten parsnips, and I should've let their flavor stand on its own. The sausages were good, too. Nice texture and good flavor, but could've done with a bit less time in the oven. If I did this again, I'd try cooking the veggies for a half hour or so before tossing the sausages in.
Having said that, while I thoroughly enjoyed the meal, and the simplicity of it all, I was a bit shocked when working out the Weight Watchers points for it. I really need to start working out the points before I cook a new recipe. The sausages were 5 points each, and I ate two. Ouch.
With a daily allocation of 34 points, it's not hard to work in 10 points worth of sausages with a little advanced planning. But not so easy for a person on 20 points a day. If I do this meal again, I'm going to make sure I've got some damned good sausages to make it worth it.
