More Fruit, More Vegetables

Looking at my meals for that last week, it's clear that I need to eat more fruit and vegetables.

Saturday-- b: oatmeal (dried fruit); l: sandwich (lettuce, tomato) & rice crackers ; d: beans & rice
Sunday-- b: oatmeal; l: beans & rice; d: meat loaf (onion, carrot, capsicum), mashed potatoes, green beans, carrots
Monday-- b: oatmeal; l: beans & rice; d: veggie (onion, carrot, celery, parsnip, tomatoes, cabbage) & bacon soup
Tuesday-- b: oatmeal; l: beans & rice; d: tuna & zucchini pasta (zucchini, onion, peas)
Wednesday-- b: oatmeal; l: tuna & zucchini pasta; d: spaghetti
Thursday: b: oatmeal; l: beans & rice; d: spaghetti

I'm averaging a half a serve of fruit, just shy of 3 serves of veggies, and I  managed to hit the target for veggies on one out of 6 days. And I think the range of vegetables I'm eating is also pretty small. Onions, carrots, celery, lettuce, tomato, green beans, green peas, capsicum, parsnip, cabbage, and zucchini. It could be a lot worse, I suppose. But it could also be better. And the fact that the only fruit I've eaten all week are the sultanas and other bits of dried fruit from the cereal I've been mixing in with my oatmeal is really sad.

Usually I at eat at least a couple of bananas a week, but I forgot to order them last week. I got some this week, though, so I'll definitely be eating more fruit. Hell, I'm eating an apple right now because I feel like a dick for not eating any fruit all week. Damn, it was a good apple, too. A pink lady from Hillside Orchard that I bought for Karen when I was at the farmers market last week.

I'm going to have to think about some ways to get more fruit and vegetables, and I'd like to come up with something other than salads and raw fruit. I like both, but I tend to go at it for a while and then slack off.
